Description

A refreshing and vibrant Asian Chopped Salad that is quick and easy to prepare, perfect for a light meal or side dish.


Ingredients

  • 4 cups chopped romaine lettuce
  • 1 cup shredded carrots
  • 1 cup red cabbage, shredded
  • 1 cup cucumber, diced
  • 1/2 cup green onions, sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup sesame seeds
  • 1/2 cup edamame, shelled
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions

  1. In a large bowl, combine the chopped romaine, shredded carrots, red cabbage, cucumber, green onions, cilantro, and edamame.
  2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle sesame seeds on top before serving.
  5. Serve immediately or refrigerate for up to an hour before serving for enhanced flavors.

Notes

  • Feel free to add grilled chicken or tofu for extra protein.
  • This salad can be made ahead of time; just keep the dressing separate until ready to serve.
