- 4 cups chopped romaine lettuce
- 1 cup shredded carrots
- 1 cup red cabbage, shredded
- 1 cup cucumber, diced
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup sesame seeds
- 1/2 cup edamame, shelled
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 tablespoon fresh ginger, grated
- 1 clove garlic, minced
Instructions
- In a large bowl, combine the chopped romaine, shredded carrots, red cabbage, cucumber, green onions, cilantro, and edamame.
- In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Sprinkle sesame seeds on top before serving.
- Serve immediately or refrigerate for up to an hour before serving for enhanced flavors.
Notes
- Feel free to add grilled chicken or tofu for extra protein.
- This salad can be made ahead of time; just keep the dressing separate until ready to serve.
