Description

A delicious chicken dish stuffed with fresh asparagus and creamy mozzarella cheese, perfect for a hearty meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the asparagus, mozzarella cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning.
  3. Cut a pocket in each chicken breast and stuff with the asparagus and mozzarella mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  6. Let the chicken rest for a few minutes before serving.

Notes

  • For added flavor, marinate the chicken breasts for a few hours before stuffing.
  • Serve with a side salad or roasted vegetables for a complete meal.
