Description

A vibrant salad featuring creamy avocados and sweet mangoes, complemented by cherry tomatoes and red onion with a zesty lime dressing.


Ingredients

  • 2 ripe mangoes, diced
  • 2 ripe avocados, diced
  • 1 red onion, thinly sliced
  • 1 cup of cherry tomatoes, halved
  • ¼ cup of fresh cilantro, chopped
  • 1 small jalapeño (optional), thinly sliced
  • ¼ cup of crumbled feta or cotija cheese (optional)
  • 3 tablespoons of fresh lime juice
  • 1 tablespoon of lime zest
  • 2 tablespoons of olive oil
  • 1 teaspoon of honey (optional)
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Dice the mango and avocado into bite-sized pieces, being careful not to mash them.
  2. Slice the red onion thinly and halve the cherry tomatoes.
  3. Chop the cilantro finely.
  4. In a small bowl or blender, combine lime juice, lime zest, olive oil, minced garlic, and honey (if using).
  5. Whisk or blend until smooth and fully integrated.
  6. In a large mixing bowl, combine the diced mango, avocado, cherry tomatoes, red onion, and cilantro.
  7. Drizzle the lime dressing over the salad and gently toss until coated.
  8. Serve immediately, topping with crumbled cheese and garnishing with lime zest or jalapeño slices.

Notes

Chop the veggies and store them separately in the fridge for up to a day to maintain freshness.
