Ingredients

- 2 ripe mangoes, diced
- 2 ripe avocados, diced
- 1 red onion, thinly sliced
- 1 cup of cherry tomatoes, halved
- ¼ cup of fresh cilantro, chopped
- 1 small jalapeño (optional), thinly sliced
- ¼ cup of crumbled feta or cotija cheese (optional)
- 3 tablespoons of fresh lime juice
- 1 tablespoon of lime zest
- 2 tablespoons of olive oil
- 1 teaspoon of honey (optional)
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Dice the mango and avocado into bite-sized pieces, being careful not to mash them.
- Slice the red onion thinly and halve the cherry tomatoes.
- Chop the cilantro finely.
- In a small bowl or blender, combine lime juice, lime zest, olive oil, minced garlic, and honey (if using).
- Whisk or blend until smooth and fully integrated.
- In a large mixing bowl, combine the diced mango, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle the lime dressing over the salad and gently toss until coated.
- Serve immediately, topping with crumbled cheese and garnishing with lime zest or jalapeño slices.
Notes
Chop the veggies and store them separately in the fridge for up to a day to maintain freshness.
