Description

Deliciously soft and chewy bars made with ripe bananas, rolled oats, and customizable mix-ins like nuts or chocolate chips.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup almond milk (or milk of your choice)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • A pinch of salt
  • 1/2 cup mix-ins (such as chocolate chips, nuts, or dried fruit)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Blend together the mashed bananas, almond milk, honey or maple syrup, and vanilla extract until smooth.
  3. Combine rolled oats, baking powder, cinnamon, and a pinch of salt in another bowl.
  4. Add the dry ingredient mixture into the wet banana mix and fold gently.
  5. Fold in your choice of mix-ins.
  6. Spread the mixture into the prepared baking dish evenly.
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool for at least 10 minutes before cutting into squares.

Notes

Make ahead by preparing wet and dry ingredients separately. Store bars in an airtight container in the fridge for up to a week.
