Description

A delightful baked dish featuring creamy feta, fresh spinach, and cherry tomatoes with perfectly cooked eggs, ideal for any meal.


Ingredients

Scale
  • 1 cup Feta Cheese, crumbled
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Bell Pepper, diced
  • 2 cups Fresh Spinach
  • 4 Eggs
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Freshly cracked Pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a ramekin, add a layer of spinach at the bottom.
  3. Top with cherry tomatoes and diced red bell pepper.
  4. Crumble feta cheese over the top.
  5. Crack an egg into each ramekin on top of the feta.
  6. Drizzle with olive oil, and season with salt and pepper.
  7. Bake in the oven for about 20-25 minutes, until the eggs are set to your liking.
  8. Serve warm and enjoy!

Notes

You can prepare the ramekins in advance and bake them fresh in the morning. Customize with other vegetables or spices as desired.
