- 1 cup Feta Cheese, crumbled
- 1 cup Cherry Tomatoes, halved
- 1 Red Bell Pepper, diced
- 2 cups Fresh Spinach
- 4 Eggs
- 2 tablespoons Olive Oil
- Salt, to taste
- Freshly cracked Pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a ramekin, add a layer of spinach at the bottom.
- Top with cherry tomatoes and diced red bell pepper.
- Crumble feta cheese over the top.
- Crack an egg into each ramekin on top of the feta.
- Drizzle with olive oil, and season with salt and pepper.
- Bake in the oven for about 20-25 minutes, until the eggs are set to your liking.
- Serve warm and enjoy!
Notes
You can prepare the ramekins in advance and bake them fresh in the morning. Customize with other vegetables or spices as desired.
