- 2 ripe bananas
- 1 cup peanut butter
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add the peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas and mix well.
- In a separate bowl, combine the rolled oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- If desired, fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for longer storage.
- Feel free to add nuts or dried fruits for extra flavor.
