Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, brown the beef knuckle on all sides over medium heat.
- Add the chopped onion and minced garlic, sautéing until fragrant.
- Pour in the beef broth and red wine, bringing the mixture to a simmer.
- Add the sliced carrots, diced potatoes, mustard, thyme, salt, and pepper.
- Cover the pot and transfer it to the oven, cooking for 2-3 hours until the meat is tender.
- Remove from the oven and let it rest for a few minutes before serving.
