Ingredients

  • 1 cup all-purpose flour (spooned and leveled)
  • 1/2 cup old-fashioned oats (blended into a powder)
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • 1/4 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg (optional)
  • 1/8 teaspoon cloves (optional)
  • 1/2 to 3/4 cup toasted pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray.
  2. If you’re using nuts, toast them for 5-7 minutes in a dry skillet over medium heat, stirring frequently until fragrant.
  3. Cream the softened butter with the brown and granulated sugars until fluffy and light, about 2-3 minutes.
  4. Add the eggs, one at a time, beating until well incorporated. Pour in the vanilla extract, mixing until smooth.
  5. Mash your ripe bananas in a separate bowl until smooth, then fold them into the butter mixture.
  6. Whisk together the flour, blended oats, baking soda, baking powder, and salt in another bowl.
  7. Gradually incorporate the dry mixture into the wet ingredients, mixing until just combined.
  8. Fold in the sour cream and toasted nuts (if desired), merging everything evenly.
  9. Pour the batter into the prepared loaf pan and smooth out the top. Bake for 55-65 minutes, or until a toothpick comes out clean.
  10. Allow the bread to cool in the pan for about 20 minutes before transferring it to a wire rack.
