Instructions
- Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray.
- If you’re using nuts, toast them for 5-7 minutes in a dry skillet over medium heat, stirring frequently until fragrant.
- Cream the softened butter with the brown and granulated sugars until fluffy and light, about 2-3 minutes.
- Add the eggs, one at a time, beating until well incorporated. Pour in the vanilla extract, mixing until smooth.
- Mash your ripe bananas in a separate bowl until smooth, then fold them into the butter mixture.
- Whisk together the flour, blended oats, baking soda, baking powder, and salt in another bowl.
- Gradually incorporate the dry mixture into the wet ingredients, mixing until just combined.
- Fold in the sour cream and toasted nuts (if desired), merging everything evenly.
- Pour the batter into the prepared loaf pan and smooth out the top. Bake for 55-65 minutes, or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 20 minutes before transferring it to a wire rack.
