Delicious blueberry oatmeal crumble bars with a crunchy oat topping and a fruity filling, perfect for breakfast or dessert.

- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1 large egg yolk
- 2 cups blueberries (fresh or frozen)
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- In a large bowl, whisk together the flour, oats, both sugars, cinnamon, and salt. Pour in the melted butter and egg yolk, mixing until crumbly. Reserve a cup for topping.
- In a separate bowl, combine the blueberries, lemon juice, sugar, and cornstarch; stir gently until coated.
- Press the remaining oat mixture into the pan as a base layer, spread the blueberry mixture over the top, and sprinkle reserved crumbs.
- Bake for 30-35 minutes until golden brown and bubbling.
- Cool in the pan before lifting out and slicing into squares.
Notes
These bars can be customized with nuts or different fruits. Allow to cool completely for neat slices.
