Description

Delicious blueberry oatmeal crumble bars with a crunchy oat topping and a fruity filling, perfect for breakfast or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1 large egg yolk
  • 2 cups blueberries (fresh or frozen)
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, oats, both sugars, cinnamon, and salt. Pour in the melted butter and egg yolk, mixing until crumbly. Reserve a cup for topping.
  3. In a separate bowl, combine the blueberries, lemon juice, sugar, and cornstarch; stir gently until coated.
  4. Press the remaining oat mixture into the pan as a base layer, spread the blueberry mixture over the top, and sprinkle reserved crumbs.
  5. Bake for 30-35 minutes until golden brown and bubbling.
  6. Cool in the pan before lifting out and slicing into squares.

Notes

These bars can be customized with nuts or different fruits. Allow to cool completely for neat slices.
