  • 1 cup cooked lean meat (ground turkey or chicken sausage, or black beans for vegetarian)
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper to taste
  • 4 large tortillas
  • Optional toppings: salsa, avocado slices, or sour cream

Instructions

  1. Sauté the vegetables: In a large skillet, heat a small drizzle of oil over medium heat. Add the diced bell peppers and onions, sautéing until soft, about 5 minutes.
  2. Scramble the eggs: In a bowl, whisk together the eggs, salt, and pepper until frothy. Pour the egg mixture into the skillet, gently scrambling with the sautéed vegetables, until just set, about 3-4 minutes.
  3. Mix in meat and cheese: Stir in your cooked lean meat and shredded cheese, letting the cheese melt into the warm egg mixture.
  4. Assemble the burrito: Lay a tortilla flat, spoon a portion of the egg mixture in the center, fold the sides in, and roll tightly from the bottom.
  5. Repeat: Continue with remaining tortillas and filling.
  6. To freeze: Wrap each burrito in foil or plastic wrap and store in a freezer-safe bag.
