- 4 large tortillas

Instructions
- Sauté the vegetables: In a large skillet, heat a small drizzle of oil over medium heat. Add the diced bell peppers and onions, sautéing until soft, about 5 minutes.
- Scramble the eggs: In a bowl, whisk together the eggs, salt, and pepper until frothy. Pour the egg mixture into the skillet, gently scrambling with the sautéed vegetables, until just set, about 3-4 minutes.
- Mix in meat and cheese: Stir in your cooked lean meat and shredded cheese, letting the cheese melt into the warm egg mixture.
- Assemble the burrito: Lay a tortilla flat, spoon a portion of the egg mixture in the center, fold the sides in, and roll tightly from the bottom.
- Repeat: Continue with remaining tortillas and filling.
- To freeze: Wrap each burrito in foil or plastic wrap and store in a freezer-safe bag.
