Cherry–Lime Chili Spark Jam is a vibrant and zesty jam that combines the sweetness of cherries with the tanginess of lime and a hint of chili heat, creating a unique flavor explosion.

- 2 cups fresh cherries, pitted
- 1/2 cup fresh lime juice
- 1 cup sugar
- 1/4 cup water
- 1–2 teaspoons chili flakes (adjust to taste)
- 1 packet pectin (for jam)
Instructions
- In a large pot, combine the pitted cherries, lime juice, sugar, and water.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Add the chili flakes and stir well.
- Once boiling, add the pectin and continue to boil for 1-2 minutes, stirring constantly.
- Remove from heat and let it cool slightly before pouring into sterilized jars.
- Seal the jars and let them cool completely at room temperature.
- Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.

- Adjust the amount of chili flakes based on your heat preference.
- This jam pairs well with cream cheese on crackers or as a glaze for meats.
