A comforting and satisfying sandwich filled with savory chicken, sautéed bell peppers, onions, and melted provolone cheese.

- 2 chicken breasts, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 4 slices provolone cheese
- 4 hoagie rolls
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced chicken breast and season with salt and pepper. Cook until no longer pink, around 5-7 minutes.
- Add sliced bell peppers and onions to the skillet and sauté until softened, about 3-4 minutes.
- Place provolone cheese on top and cover to melt for a few minutes.
- Toast hoagie rolls until golden brown.
- Fill the rolls with the chicken and veggie mixture generously.
- Serve immediately with fries, chips, or salad.
Notes
Prep ingredients a day in advance if desired and store in the fridge. Avoid overcrowding the skillet for best results.
