- 4 boneless, skinless chicken breasts
- 4 slices of prosciutto
- 1 medium eggplant, sliced
- 1 cup of mozzarella cheese, shredded
- 1 cup of marinara sauce
- 1/2 cup of all-purpose flour
- 2 large eggs, beaten
- 1 cup of breadcrumbs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.
- In a large skillet, heat olive oil over medium heat and fry the chicken until golden brown on both sides.
- Remove the chicken and place it in a baking dish.
- Top each chicken breast with a slice of prosciutto, a slice of eggplant, and a generous amount of mozzarella cheese.
- Pour marinara sauce over the chicken and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve hot with additional marinara sauce if desired.
