A hearty Chicken and Spinach Casserole that combines tender chicken, fresh spinach, and creamy cheeses, baked to perfection.

- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- ½ cup Parmesan cheese, optional
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease your 9×13 inch baking dish.
- Cut the chicken breasts in half horizontally to create four cutlets.
- In a large bowl, whisk 1 tablespoon of olive oil with minced garlic, Italian seasoning, salt, and pepper. Coat the chicken, cover, and chill for 15-30 minutes.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Sauté fresh spinach until wilted, about 2-3 minutes.
- In a medium bowl, beat the cream cheese until smooth. Fold in the wilted spinach and ½ cup of shredded mozzarella.
- Remove the marinated chicken from the fridge, allowing excess marinade to drip off, then arrange in a single layer in the baking dish.
- Spread the creamy spinach mixture over the chicken and sprinkle with the remaining mozzarella.
- Bake for 20-30 minutes until chicken is cooked through and cheese is melted and golden. Let it stand for 5 minutes before serving.
Notes
Make it ahead by assembling without baking, refrigerate, and add extra cooking time when baking. Customize by adding sautéed mushrooms or sun-dried tomatoes for extra flavor.
