Description

A hearty Chicken and Spinach Casserole that combines tender chicken, fresh spinach, and creamy cheeses, baked to perfection.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • ½ cup Parmesan cheese, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease your 9×13 inch baking dish.
  2. Cut the chicken breasts in half horizontally to create four cutlets.
  3. In a large bowl, whisk 1 tablespoon of olive oil with minced garlic, Italian seasoning, salt, and pepper. Coat the chicken, cover, and chill for 15-30 minutes.
  4. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Sauté fresh spinach until wilted, about 2-3 minutes.
  5. In a medium bowl, beat the cream cheese until smooth. Fold in the wilted spinach and ½ cup of shredded mozzarella.
  6. Remove the marinated chicken from the fridge, allowing excess marinade to drip off, then arrange in a single layer in the baking dish.
  7. Spread the creamy spinach mixture over the chicken and sprinkle with the remaining mozzarella.
  8. Bake for 20-30 minutes until chicken is cooked through and cheese is melted and golden. Let it stand for 5 minutes before serving.

Notes

Make it ahead by assembling without baking, refrigerate, and add extra cooking time when baking. Customize by adding sautéed mushrooms or sun-dried tomatoes for extra flavor.
