Description

A comforting Chicken and Spinach Casserole filled with creamy goodness, tender chicken, and vibrant spinach, perfect for any occasion.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional

Instructions

  1. Preheat the oven to 400°F and grease a 9×13 inch baking dish.
  2. Cut the chicken breasts in half horizontally for even cooking and pound to uniform thickness.
  3. In a bowl, whisk together 1 tablespoon of olive oil, garlic, Italian seasoning, salt, and pepper. Coat chicken and chill for 15-30 minutes.
  4. Heat 1 tablespoon olive oil in a skillet over medium heat and sauté spinach until wilted, about 2-3 minutes. Set aside to cool.
  5. In a bowl, beat the cream cheese until smooth and fold in the wilted spinach and 1/2 cup mozzarella.
  6. Retrieve marinated chicken, letting excess marinade drip off. Optionally sear in skillet for 1-2 minutes per side.
  7. Spread the creamy spinach mixture over the chicken in the baking dish, topping with remaining mozzarella.
  8. Bake for 20-30 minutes until chicken is cooked through and cheese is melted and browned. Let rest for 5 minutes before serving.

Notes
