Description

A delightful dish featuring juicy chicken thighs marinated in a sweet and spicy honey-chipotle glaze, served alongside creamy smoked Gouda mashed potatoes.


Ingredients

  • 4 Bone-in, skin-on chicken thighs
  • 2 tsp Chipotle powder
  • 3 tbsp Honey
  • Salt and Black Pepper to taste
  • 2 tbsp Olive Oil
  • 2 lb Potatoes (russets or Yukon Gold)
  • 1 cup Smoked Gouda Cheese, shredded
  • 2 tbsp Butter
  • 1/2 cup Milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix chipotle powder, honey, salt, and black pepper to create the marinade.
  3. Rub the marinade generously over the chicken thighs.
  4. Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. While the chicken is baking, peel and chop the potatoes. Boil them in salted water for about 15 minutes until tender.
  7. Drain the potatoes and mash them with smoked Gouda, butter, and milk until smooth and creamy.
  8. Plate the chicken beside the smoked Gouda mashed potatoes and serve.

Notes

Marinate the chicken the night before for enhanced flavor. Can substitute chicken breasts but monitor cooking closely.
