A delightful dish featuring juicy chicken thighs marinated in a sweet and spicy honey-chipotle glaze, served alongside creamy smoked Gouda mashed potatoes.

- 4 Bone-in, skin-on chicken thighs
- 2 tsp Chipotle powder
- 3 tbsp Honey
- Salt and Black Pepper to taste
- 2 tbsp Olive Oil
- 2 lb Potatoes (russets or Yukon Gold)
- 1 cup Smoked Gouda Cheese, shredded
- 2 tbsp Butter
- 1/2 cup Milk
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chipotle powder, honey, salt, and black pepper to create the marinade.
- Rub the marinade generously over the chicken thighs.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- While the chicken is baking, peel and chop the potatoes. Boil them in salted water for about 15 minutes until tender.
- Drain the potatoes and mash them with smoked Gouda, butter, and milk until smooth and creamy.
- Plate the chicken beside the smoked Gouda mashed potatoes and serve.
Notes
Marinate the chicken the night before for enhanced flavor. Can substitute chicken breasts but monitor cooking closely.
