Description

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup chocolate chips
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the rolled oats, flour, sugar, baking powder, baking soda, and salt.
  3. Mash the bananas until smooth, then whisk in the milk, vegetable oil, vanilla extract, and egg.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the chocolate chips with a spatula to ensure an even distribution.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
