- 1 cup unsalted butter, melted and slightly cooled
- 1 1/4 cups light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup granulated sugar, for the swirls
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted (for swirl)
- 2 tablespoons granulated sugar mixed with 1/2 teaspoon ground cinnamon (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine melted butter, brown sugar, and granulated sugar. Whisk until smooth, then add eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually fold into the wet mixture.
- For the cinnamon swirl, combine granulated sugar and cinnamon in a small bowl.
- Coat the baking pan with melted butter and sprinkle a portion of the cinnamon-sugar mixture.
- Pour half of the blondie batter into the pan, sprinkle half of the remaining cinnamon-sugar, then add the rest of the batter and top with remaining butter and cinnamon-sugar mixture.
- Bake for 20-25 minutes until golden and a toothpick comes out with moist crumbs.
- Let cool in the pan for 10 minutes, then transfer to a cooling rack, slice, and serve.
Notes
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking blend.
