Description

A vibrant and refreshing Copycat Chipotle Chili Corn Salsa that combines sweet corn, roasted poblano pepper, fresh cilantro, and zesty lime for an explosion of flavor.


Ingredients

  • 16 ounces frozen white corn kernels
  • 1 poblano pepper
  • ⅓ cup fresh cilantro, chopped
  • ½ red onion, finely chopped
  • 1 jalapeño pepper, finely diced
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Prepare the corn by cooking it according to package instructions, then draining and cooling it.
  2. Roast the poblano pepper over an open flame or under the broiler until charred, then steam and peel it.
  3. Assemble the salsa by combining the corn, roasted poblano, cilantro, onion, and jalapeño in a large mixing bowl.
