Description

Ingredients

  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup oats
  • 1 tsp baking powder

  • Mix-ins: chocolate chips, nuts, or dried fruits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the cottage cheese, honey (or maple syrup), vanilla extract, and egg in a large bowl until creamy.
  3. Sprinkle in the oats and baking powder, mixing gently.
  4. Fold in your choice of mix-ins.
  5. Line a baking sheet with parchment paper and drop cookie dough onto it.
  6. Bake for 12-15 minutes until edges are golden and centers are soft.
  7. Cool on baking sheet for 5 minutes before transferring to a wire rack.
