Description

A refreshing and creamy salad bowl featuring cucumbers and Asian flavors, perfect for a light meal or side dish.


Ingredients

  • 2 large cucumbers
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped

Instructions

  1. Wash and slice the cucumbers thinly.
  2. In a bowl, mix together the Greek yogurt, rice vinegar, soy sauce, sesame oil, sugar, salt, and black pepper until smooth.
  3. Add the sliced cucumbers to the dressing and toss to coat.
  4. Sprinkle sesame seeds and chopped green onions on top.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes.
  • This salad can be made a few hours in advance for better flavor.
