- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1 tablespoon taco seasoning
- 8 small tortillas
- Oil for frying
Instructions
- In a bowl, mix the shredded chicken, cottage cheese, shredded cheese, diced onions, diced tomatoes, and taco seasoning until well combined.
- Heat oil in a skillet over medium heat.
- Take a tortilla and place a generous amount of the chicken mixture in the center.
- Fold the tortilla in half and press down gently.
- Fry the folded tortilla in the skillet until golden brown and crispy on both sides.
- Remove from the skillet and drain on paper towels.
- Serve warm with your favorite toppings.
