- 1 head cauliflower, chopped
- 2 cups broccoli florets
- 2 cups carrots, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 cups shredded cheese (like cheddar or mozzarella)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly steam the cauliflower, broccoli, and carrots until just tender.
- In a medium saucepan, melt the butter over medium heat. Add the flour and stir for about a minute to create a roux.
- Gradually whisk in the milk, stirring continuously until thickened.
- Remove from heat and stir in the shredded cheese until melted. Season with salt, pepper, garlic powder, and onion powder.
- Mix the steamed vegetables with the cheese sauce and transfer to a greased baking dish.
- Sprinkle breadcrumbs on top.
- Bake for 25-30 minutes, or until golden and bubbly.
- Allow to cool slightly before serving.
Notes
Make it ahead of time and refrigerate before baking. Customize with different cheeses or add cooked protein.
