Description

A heartwarming casserole filled with tender winter vegetables enveloped in a creamy cheese sauce, topped with crunchy breadcrumbs.


Ingredients

  • 1 head cauliflower, chopped
  • 2 cups broccoli florets
  • 2 cups carrots, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheese (like cheddar or mozzarella)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly steam the cauliflower, broccoli, and carrots until just tender.
  3. In a medium saucepan, melt the butter over medium heat. Add the flour and stir for about a minute to create a roux.
  4. Gradually whisk in the milk, stirring continuously until thickened.
  5. Remove from heat and stir in the shredded cheese until melted. Season with salt, pepper, garlic powder, and onion powder.
  6. Mix the steamed vegetables with the cheese sauce and transfer to a greased baking dish.
  7. Sprinkle breadcrumbs on top.
  8. Bake for 25-30 minutes, or until golden and bubbly.
  9. Allow to cool slightly before serving.

Notes

Make it ahead of time and refrigerate before baking. Customize with different cheeses or add cooked protein.
