- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for 5-6 minutes per side until golden and crispy.
- Remove the chicken from the skillet and set aside on a plate.
- Add minced garlic to the pan and sauté for about 30 seconds.
- Pour in the cream while stirring continuously.
- Add Italian seasoning and grated parmesan cheese, mixing thoroughly.
- If using spinach, add it to the sauce and simmer for 2-3 minutes.
- Return the crispy chicken to the pan and spoon the sauce over the top.
- Simmer everything together for one more minute before serving.
Notes
For a healthier take, consider using an air fryer or baking the chicken in the oven at 375°F.
