Description

A delightful Mediterranean dish featuring crispy pita filled with spiced chicken mince and creamy feta, garnished with fresh herbs.


Ingredients

  • 500 g Chicken Mince
  • 150 g Feta Cheese
  • 1 medium Red Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 2 tbsp Fresh Mint, chopped
  • 2 tbsp Fresh Parsley, chopped
  • 3 tbsp Olive Oil
  • 4 pieces Pita Bread

Instructions

  1. Prepare the filling: In a large mixing bowl, combine chicken mince, feta, red onion, garlic, lemon juice, lemon zest, mint, and parsley. Mix gently.
  2. Heat the skillet: In a non-stick skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  3. Cook the mixture: Scoop tablespoon-sized dollops of the filling into the skillet. Cook for about 5-6 minutes, flipping occasionally until golden-brown.
  4. Prepare the pitas: Drizzle olive oil on each side of the pita bread before placing it in the skillet. Toast for about 1-2 minutes on each side until crispy.
  5. Assemble and serve: Fill each toasted pita with the warm chicken and feta filling, then serve with a squeeze of fresh lemon on top.

Notes

Avoid overcrowding the skillet while cooking the filling. Prepare the filling ahead of time and store it in the fridge for up to 24 hours.
