Ingredients

- 2 cups cooked rice (preferably jasmine or brown)
- 1 cup shredded carrots
- 1 cup chopped cucumbers
- 1 red bell pepper, diced
- 1/2 cup chopped green onions
- 1/2 cup chopped cilantro
- 1/4 cup chopped peanuts
- 1/4 cup sesame seeds
- 1/3 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1–2 tablespoons water (to thin the dressing)
- Salt and pepper to taste
Instructions
- Combine the cooked rice, shredded carrots, chopped cucumbers, diced red bell pepper, green onions, cilantro, peanuts, and sesame seeds in a large bowl.
- Whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, and water in a separate bowl until smooth.
- Pour the dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste.
- Serve immediately, or allow to chill in the refrigerator for about 30 minutes before serving.
Notes
Customize with additional proteins like grilled chicken or tofu. Use fresh seasonal vegetables for variation.
