Description

A simple and delicious one-pan meal featuring chicken, rice, and a creamy tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the diced chicken, rice, and chicken broth.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Spread the tzatziki sauce evenly over the chicken and rice mixture.
  5. Add the cherry tomatoes and cucumber on top.
  6. Cover the dish with aluminum foil and bake for 30-35 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender.
