Ingredients

- 1/4 cup rice vinegar

- 1 clove garlic, minced

- 2 green onions, sliced
Instructions
- Wash and slice the cucumbers thinly.
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, ginger, and garlic.
- Add the sliced cucumbers to the dressing and toss to coat.
- Let the salad sit for 10 minutes to allow the flavors to meld.
- Garnish with sesame seeds and green onions before serving.
Notes
- For extra crunch, add sliced bell peppers or carrots.
