Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup olive oil
- 3/4 cup water
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon coarse sea salt for topping
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, combine flour, baking powder, and salt; whisk until lumps are gone.
- In another bowl, whisk together olive oil, water, minced garlic, and chopped rosemary.
- Pour wet ingredients into the dry mixture, and fold gently with a rubber spatula until just combined.
- Spoon batter into the muffin tin, filling each about ¾ full.
- Sprinkle coarse sea salt on top of each muffin.
- Bake for 15-20 minutes until golden brown and a skewer comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
Make-ahead by preparing the batter the night before, or experiment with different herbs for added flavor.
