Description

Delicious and fluffy muffins infused with garlic and rosemary, perfect for any occasion.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 3/4 cup water
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon coarse sea salt for topping

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, combine flour, baking powder, and salt; whisk until lumps are gone.
  3. In another bowl, whisk together olive oil, water, minced garlic, and chopped rosemary.
  4. Pour wet ingredients into the dry mixture, and fold gently with a rubber spatula until just combined.
  5. Spoon batter into the muffin tin, filling each about ¾ full.
  6. Sprinkle coarse sea salt on top of each muffin.
  7. Bake for 15-20 minutes until golden brown and a skewer comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Make-ahead by preparing the batter the night before, or experiment with different herbs for added flavor.
