- 0.5 cup all-purpose flour
- 0.5 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 0.5 teaspoon salt
- 0.25 cup honey
- 1/3 cup milk
- 0.25 cup vegetable oil
- 1 cup grated carrots
- 0.5 cup raisins or chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together rolled oats, flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
- Make a well in the center, then add honey, milk, and vegetable oil. Mix in the grated carrots gently.
- Fold in raisins or nuts if using.
- Scoop the batter into a lined muffin tin, filling each cup about three-quarters full.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
Notes
Avoid overmixing the batter for fluffier muffins.
