Description

Delightful muffins infused with carrots, rolled oats, and a hint of cinnamon, perfect for breakfast or a wholesome snack.


Ingredients

  • 1 cup rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.25 cup honey
  • 1/3 cup milk
  • 0.25 cup vegetable oil
  • 1 cup grated carrots
  • 0.5 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together rolled oats, flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
  3. Make a well in the center, then add honey, milk, and vegetable oil. Mix in the grated carrots gently.
  4. Fold in raisins or nuts if using.
  5. Scoop the batter into a lined muffin tin, filling each cup about three-quarters full.
  6. Bake for 18–20 minutes, or until a toothpick comes out clean.

Notes

Avoid overmixing the batter for fluffier muffins.
