Description

Delicious Egg Roll Bowls filled with tender chicken, vibrant vegetables, and savory sauce, offering a comforting yet nutritious meal.


Ingredients

  • 1 lb chicken breast, diced
  • 4 cups cabbage, shredded
  • 1 cup carrots, shredded
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked cauliflower rice or rice of choice (optional)

Instructions

  1. Heat sesame oil in a skillet over medium heat until it shimmers.
  2. Add diced chicken, cooking until browned and cooked through, about 5-7 minutes.
  3. Stir in garlic and ginger, cooking for an additional minute until fragrant.
  4. Fold in shredded cabbage and carrots, sautéing until tender, about 3-5 minutes.
  5. Pour in soy sauce, mixing well to evenly coat the ingredients.
  6. Taste and season with salt and pepper as desired.
  7. Serve mixture over cauliflower rice or regular rice.
  8. Garnish with freshly chopped green onions before serving.
