Description

A healthy twist on pizza using eggplant as a hearty and delicious crust, topped with cheese and fresh vegetables.


Ingredients

Scale
  • 2 medium firm eggplants
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 1 cup tomato sauce
  • 1 cup mozzarella or vegan cheese
  • Toppings of choice (bell peppers, olives, pepperoni, mushrooms, fresh basil)

Instructions

  1. Preheat your oven to 200°C (about 400°F).
  2. Slice the eggplant into thick, even rounds, about 1-inch thick.
  3. Place the eggplant slices on a baking sheet and drizzle with olive oil, then season with salt and pepper.
  4. Roast the eggplant for 20 minutes until tender.
  5. Remove from the oven and spread tomato sauce over each slice, then top with cheese.
  6. Add your selected toppings and return to the oven.
  7. Bake for an additional 10 minutes until the cheese melts and bubbles.
  8. Serve hot and enjoy!

Notes

Consider salting the eggplant slices beforehand to enhance flavor and keep them from becoming soggy. Experiment with different toppings for variety.
