A healthy twist on pizza using eggplant as a hearty and delicious crust, topped with cheese and fresh vegetables.
Ingredients

- 2 medium firm eggplants
- 2 tablespoons olive oil
- Salt & pepper to taste
- 1 cup tomato sauce
- 1 cup mozzarella or vegan cheese
- Toppings of choice (bell peppers, olives, pepperoni, mushrooms, fresh basil)
Instructions
- Preheat your oven to 200°C (about 400°F).
- Slice the eggplant into thick, even rounds, about 1-inch thick.
- Place the eggplant slices on a baking sheet and drizzle with olive oil, then season with salt and pepper.
- Roast the eggplant for 20 minutes until tender.
- Remove from the oven and spread tomato sauce over each slice, then top with cheese.
- Add your selected toppings and return to the oven.
- Bake for an additional 10 minutes until the cheese melts and bubbles.
- Serve hot and enjoy!
Notes
Consider salting the eggplant slices beforehand to enhance flavor and keep them from becoming soggy. Experiment with different toppings for variety.
