Description

Elote Cup is a delicious Mexican street food that features sweet corn served in a cup, topped with creamy sauces, cheese, and spices.


Ingredients

  • 4 ears of corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Grill the corn until charred, about 10 minutes, turning occasionally.
  2. Let the corn cool slightly, then cut the kernels off the cob.
  3. In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and salt.
  4. Add the corn kernels to the mixture and stir until well combined.
  5. Serve the corn mixture in cups, topped with crumbled cotija cheese and chopped cilantro.
