Description

The Envelope-Method Roast is a cooking technique that locks in moisture and flavor, resulting in juicy and delicious meals.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon, halved
  • 4 garlic cloves, minced
  • Fresh herbs (such as rosemary or thyme)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large piece of parchment paper or aluminum foil.
  3. Place the chicken in the center of the parchment/foil.
  4. Drizzle olive oil over the chicken and season with salt and pepper.
  5. Stuff the cavity of the chicken with lemon halves, garlic, and fresh herbs.
  6. Wrap the parchment/foil tightly around the chicken to create a sealed envelope.
  7. Place the envelope on a baking sheet and roast in the preheated oven for 1.5 hours.
  8. Remove from the oven and let it rest for 10 minutes before unwrapping.
  9. Serve and enjoy your juicy roast!
