- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 lemon, halved
- 4 garlic cloves, minced
- Fresh herbs (such as rosemary or thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare a large piece of parchment paper or aluminum foil.
- Place the chicken in the center of the parchment/foil.
- Drizzle olive oil over the chicken and season with salt and pepper.
- Stuff the cavity of the chicken with lemon halves, garlic, and fresh herbs.
- Wrap the parchment/foil tightly around the chicken to create a sealed envelope.
- Place the envelope on a baking sheet and roast in the preheated oven for 1.5 hours.
- Remove from the oven and let it rest for 10 minutes before unwrapping.
- Serve and enjoy your juicy roast!
