- 6 large Eggs
- 1 cup Cottage Cheese
- 1 cup Shredded Cheese (Cheddar, mozzarella, or Swiss)
- 1/4 cup Milk
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1 cup Chopped Vegetables (Bell peppers, spinach, mushrooms)
- 1 cup Cooked Turkey Bacon/Chicken Sausage (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin with non-stick spray or liners.
- Gather your ingredients. In your mixing bowl, lightly whisk together the eggs and milk until smooth.
- Mix in the cottage cheese until fully combined.
- Add the shredded cheese, garlic powder, onion powder, salt, and black pepper; stir to incorporate the flavors.
- Incorporate the chopped vegetables and cooked meat (if desired) into the egg mixture. Fold gently to maintain the fluffy consistency.
- Distribute the mixture evenly into the muffin tin cups, filling them about 3/4 of the way full.
- Bake for 18–20 minutes, or until the tops are puffed and golden.
- Let cool for a few minutes before removing from the muffin tin. Serve warm and enjoy!
Notes
You can make these bites in an air fryer for an even fluffier texture. Pre-cook your veggies for a quicker prep.
