Description

Delicious and fluffy egg bites loaded with cottage cheese and colorful vegetables, perfect for breakfast or a snack.


Ingredients

  • 6 large Eggs
  • 1 cup Cottage Cheese
  • 1 cup Shredded Cheese (Cheddar, mozzarella, or Swiss)
  • 1/4 cup Milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1 cup Chopped Vegetables (Bell peppers, spinach, mushrooms)
  • 1 cup Cooked Turkey Bacon/Chicken Sausage (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with non-stick spray or liners.
  2. Gather your ingredients. In your mixing bowl, lightly whisk together the eggs and milk until smooth.
  3. Mix in the cottage cheese until fully combined.
  4. Add the shredded cheese, garlic powder, onion powder, salt, and black pepper; stir to incorporate the flavors.
  5. Incorporate the chopped vegetables and cooked meat (if desired) into the egg mixture. Fold gently to maintain the fluffy consistency.
  6. Distribute the mixture evenly into the muffin tin cups, filling them about 3/4 of the way full.
  7. Bake for 18–20 minutes, or until the tops are puffed and golden.
  8. Let cool for a few minutes before removing from the muffin tin. Serve warm and enjoy!

Notes

You can make these bites in an air fryer for an even fluffier texture. Pre-cook your veggies for a quicker prep.
