Description

A heartwarming dish combining succulent chicken thighs with flavorful rice and vibrant mixed vegetables, perfect for family gatherings or cozy dinners.


Ingredients

  • 4 Bone-in Chicken Thighs
  • 1 Cup Long-grain White Rice
  • 2 Cups Chicken Broth
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Cup Frozen Mixed Vegetables
  • Salt and Pepper to Taste
  • 1 Teaspoon Paprika
  • 2 Tablespoons Olive Oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the chicken in a skillet with olive oil for about 5 minutes on each side.
  3. Sauté the onion and garlic in the same skillet for 3-4 minutes.
  4. Combine rice, chicken broth, mixed vegetables, salt, pepper, and paprika in the skillet.
  5. Nestle the browned chicken on top of the rice mixture.
  6. Cover with a lid or foil and bake for 45 minutes.
  7. Rest the dish for a few minutes before serving.
