Description

  • 1 cup plain Greek yogurt (full-fat recommended for creamier texture)
  • 1/2 cup creamy peanut butter (unsweetened, natural preferred)
  • 2 tbsp maple syrup (or honey, adjust to taste)
  • 1/2 tsp vanilla extract (pure)
  • 1/4 cup mini chocolate chips (optional)
  • 1 tbsp chopped peanuts (for topping)
  • 1 tsp flaky sea salt (for topping)

Instructions

  1. In a large mixing bowl, combine the plain Greek yogurt and creamy peanut butter. Stir until fully blended for a smooth consistency.
  2. Add maple syrup and vanilla extract to the mix. Taste and adjust sweetness, folding in until everything integrates.
  3. If desired, sprinkle in mini chocolate chips for delightful bursts of sweetness.
  4. Grab your ice cube tray or mini muffin pan. Use a spoon to scoop out the mixture, filling the compartments generously.
  5. Once filled, top each bite with chopped peanuts and a sprinkle of flaky sea salt.
  6. Place the filled trays in the freezer for about 120-180 minutes or until completely frozen.
  7. Once frozen, carefully remove each bite from the tray and store in an airtight container in the freezer.

Notes

For a more indulgent version, swirl melted chocolate over the tops before freezing. These bites can last up to a month in the freezer.
