A wholesome stir fry featuring tender chicken and vibrant zucchini noodles, infused with garlic and colorful vegetables.
Ingredients

- 1 lb (450g) boneless, skinless chicken breasts
- 3 medium zucchinis, spiralized
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup carrots, julienned
- 1/4 cup low sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame seeds, for garnish
Instructions
- Cook the chicken: Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add sliced chicken, season with salt and pepper, stir-fry for 5-7 minutes until fully cooked, then remove and set aside.
- Sauté the garlic: Add another tablespoon of olive oil to the pan. Sauté minced garlic over medium heat until fragrant, about 1 minute.
- Add the vegetables: Toss in sliced red bell pepper and julienned carrots, stir-fry for 3-4 minutes until softened.
- Whisk the sauce: In a small bowl, combine soy sauce, honey, rice vinegar, grated ginger, and red pepper flakes.
- Combine with chicken: Return chicken to the pan, pour the sauce over and stir well, cooking for an additional 2-3 minutes until the sauce slightly thickens.
- Cook the zucchini noodles: In a separate pan, heat the remaining olive oil over medium heat and sauté spiralized zucchini noodles for about 2 minutes until tender yet firm.
- Toss everything together: Combine zucchini noodles with the chicken and vegetable stir-fry, tossing to coat well.
- Garnish and serve: Remove from heat, garnish with green onions and sesame seeds, and serve immediately.
