- 4 chicken thighs or breasts (bone-in, skin-on or boneless, skinless)
- 2 lemons (juice and zest)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine the juice and zest of two lemons, olive oil, minced garlic, dried oregano, salt, and pepper in a mixing bowl.
- Place your chicken into a resealable bag or shallow dish and pour the marinade over the chicken, ensuring every piece is coated.
- Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, or up to two hours for enhanced flavor.
- Preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade and let excess drip off. Arrange in a baking dish.
- Drizzle any remaining marinade over the chicken.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
- Sprinkle fresh parsley over the chicken before serving.
Notes
Letting the chicken marinate overnight intensifies the flavor. You can also grill or air fry for a smoky twist.
