- 2 ripe nectarines, halved and pitted
- 8 oz burrata cheese
- 4 oz prosciutto, thinly sliced
- 4 cups arugula
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat the grill to medium-high heat.
- Brush the cut sides of the nectarines with olive oil.
- Place the nectarines cut-side down on the grill and grill for about 3-4 minutes until grill marks appear.
- Remove the nectarines from the grill and let them cool slightly.
- In a large bowl, combine arugula, grilled nectarines, and prosciutto.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Tear the burrata cheese and add it to the salad.
- Toss gently to combine and garnish with fresh basil leaves.
- Serve immediately and enjoy!
