Description

A refreshing and delicious salad featuring grilled nectarines, creamy burrata cheese, and savory prosciutto, perfect for summer gatherings.


Ingredients

  • 2 ripe nectarines, halved and pitted
  • 8 oz burrata cheese
  • 4 oz prosciutto, thinly sliced
  • 4 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the cut sides of the nectarines with olive oil.
  3. Place the nectarines cut-side down on the grill and grill for about 3-4 minutes until grill marks appear.
  4. Remove the nectarines from the grill and let them cool slightly.
  5. In a large bowl, combine arugula, grilled nectarines, and prosciutto.
  6. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  7. Tear the burrata cheese and add it to the salad.
  8. Toss gently to combine and garnish with fresh basil leaves.
