Description

A comforting casserole combining ground turkey and sweet potatoes, enriched with fresh spinach and topped with cheese.


Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground turkey in a large skillet over medium heat until browned, about 5-7 minutes.
  3. Add the chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
  4. Stir in the diced sweet potatoes and chopped spinach, then pour in the chicken broth, adding paprika, salt, and pepper.
  5. Bring to a simmer and let bubble gently for about 10 minutes until sweet potatoes are tender.
  6. Transfer the mixture to a greased baking dish and smooth the top. Sprinkle cheese on top, if desired.
  7. Bake for 25-30 minutes until heated through and cheese is golden.

Notes

Make-ahead by preparing the filling the night before. Substitute turkey with chicken or beef if desired.
