- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 cup chicken broth
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground turkey in a large skillet over medium heat until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
- Stir in the diced sweet potatoes and chopped spinach, then pour in the chicken broth, adding paprika, salt, and pepper.
- Bring to a simmer and let bubble gently for about 10 minutes until sweet potatoes are tender.
- Transfer the mixture to a greased baking dish and smooth the top. Sprinkle cheese on top, if desired.
- Bake for 25-30 minutes until heated through and cheese is golden.
Notes
Make-ahead by preparing the filling the night before. Substitute turkey with chicken or beef if desired.
