Description

This Healthy Banana Bread is a delicious and nutritious treat, packed with ripe bananas, whole wheat flour, and optional add-ins like walnuts or chocolate chips.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup whole wheat flour
  • 1/2 cup oats (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the bananas in a mixing bowl until smooth.
  3. Mix in melted coconut oil, honey or maple syrup, vanilla extract, and the beaten egg.
  4. Add baking soda and a pinch of salt, then incorporate whole wheat flour, mixing until just combined.
  5. If desired, gently fold in oats, walnuts, or chocolate chips.
  6. Grease a loaf pan with cooking spray or coconut oil.
  7. Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 55-60 minutes, performing the toothpick test to check doneness.
  9. Let cool for a few minutes before transferring to a wire rack.

Notes

For a lower-fat version, replace coconut oil with Greek yogurt. Try different add-ins like dried fruits or seeds for variation.
