- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 egg, beaten
- 1 tsp baking soda
- Pinch of salt
- 1 cup whole wheat flour
- 1/2 cup oats (optional)
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the bananas in a mixing bowl until smooth.
- Mix in melted coconut oil, honey or maple syrup, vanilla extract, and the beaten egg.
- Add baking soda and a pinch of salt, then incorporate whole wheat flour, mixing until just combined.
- If desired, gently fold in oats, walnuts, or chocolate chips.
- Grease a loaf pan with cooking spray or coconut oil.
- Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
- Bake for 55-60 minutes, performing the toothpick test to check doneness.
- Let cool for a few minutes before transferring to a wire rack.
Notes
For a lower-fat version, replace coconut oil with Greek yogurt. Try different add-ins like dried fruits or seeds for variation.
