- 2 ripe bananas
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat the oven to 375°F (190°C).
- Mash the bananas in a large mixing bowl until smooth.
- Incorporate the yogurt, honey, egg, and vanilla into the mashed bananas.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Combine the wet and dry ingredients gently.
- Fold in optional chocolate chips or nuts.
- Divide the batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool in the tin for a few minutes before transferring to a wire rack.
Notes
Use fully ripe bananas for maximum sweetness. Batter can be prepared the night before.
