Description

A comforting bake made with tender white beans, tangy tomatoes, garlic, and topped with melted cheese, perfect for gatherings or a cozy weeknight dinner.


Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup shredded vegan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onion and garlic in olive oil over medium heat until translucent, about 5 minutes.
  3. Combine the white beans, diced tomatoes, oregano, salt, and black pepper in the skillet and cook for about 5 minutes.
  4. Transfer the mixture to a baking dish and sprinkle with vegan cheese.
  5. Bake for 20-25 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh parsley before serving.
