- 2 cans white beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup shredded vegan cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the onion and garlic in olive oil over medium heat until translucent, about 5 minutes.
- Combine the white beans, diced tomatoes, oregano, salt, and black pepper in the skillet and cook for about 5 minutes.
- Transfer the mixture to a baking dish and sprinkle with vegan cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
