- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup ranch dressing
- 4 large tortillas
- 1 tablespoon olive oil
- Optional: diced vegetables (bell peppers, onions, or spinach)
Instructions
- In a mixing bowl, combine the shredded chicken and ranch dressing. Stir until well coated and let sit.
- Heat a non-stick skillet over medium heat and add olive oil until shimmering.
- Place one tortilla in the skillet, sprinkle half of the cheese on one half.
- Spoon half of the chicken mixture onto the cheese and layer on any optional vegetables.
- Fold the tortilla over and cook until golden brown, about 2-3 minutes on each side.
- Repeat with remaining ingredients.
- Serve warm with extra ranch dressing on the side.
Notes
For a healthier version, try baking or air frying the quesadillas. Make sure not to overfill to ensure easy folding.
