Description

A savory and satisfying quesadilla packed with shredded chicken, gooey cheese, and zesty ranch dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup ranch dressing
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Optional: diced vegetables (bell peppers, onions, or spinach)

Instructions

  1. In a mixing bowl, combine the shredded chicken and ranch dressing. Stir until well coated and let sit.
  2. Heat a non-stick skillet over medium heat and add olive oil until shimmering.
  3. Place one tortilla in the skillet, sprinkle half of the cheese on one half.
  4. Spoon half of the chicken mixture onto the cheese and layer on any optional vegetables.
  5. Fold the tortilla over and cook until golden brown, about 2-3 minutes on each side.
  6. Repeat with remaining ingredients.
  7. Serve warm with extra ranch dressing on the side.

Notes

For a healthier version, try baking or air frying the quesadillas. Make sure not to overfill to ensure easy folding.
