- 1 cup basmati rice
- 1 onion, chopped
- 2 carrots, diced
- 4 cups beef broth
- 2–3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Start by setting your Instant Pot to ‘Sauté’ mode. Drizzle in the olive oil and add your chopped onions. Sauté until they become translucent.
- Incorporate the beef cubes into the pot and allow them to brown on all sides.
- Stir in the minced garlic, cumin, paprika, salt, and pepper.
- Toss in the diced carrots and rice, mixing them well.
- Pour in the beef broth and stir, ensuring nothing sticks to the bottom.
- Close the lid securely, set the valve to sealing, and cook on ‘Manual’ for 10 minutes.
- Once the timer goes off, allow for a natural pressure release for 10 minutes, then quick-release any remaining pressure.
- Fluff the rice gently with a fork and serve hot, garnishing with fresh herbs if desired.
