Description

A hearty and comforting dish featuring tender beef and fragrant basmati rice, cooked effortlessly in an Instant Pot.


Ingredients

  • 1 pound beef (chuck roast or sirloin)
  • 1 cup basmati rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 4 cups beef broth
  • 23 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Start by setting your Instant Pot to ‘Sauté’ mode. Drizzle in the olive oil and add your chopped onions. Sauté until they become translucent.
  2. Incorporate the beef cubes into the pot and allow them to brown on all sides.
  3. Stir in the minced garlic, cumin, paprika, salt, and pepper.
  4. Toss in the diced carrots and rice, mixing them well.
  5. Pour in the beef broth and stir, ensuring nothing sticks to the bottom.
  6. Close the lid securely, set the valve to sealing, and cook on ‘Manual’ for 10 minutes.
  7. Once the timer goes off, allow for a natural pressure release for 10 minutes, then quick-release any remaining pressure.
  8. Fluff the rice gently with a fork and serve hot, garnishing with fresh herbs if desired.

Notes

Make-ahead by preparing beef and vegetables a day in advance, and use fresh spices for the best flavor.
