Description

A delightful chocolate roll filled with creamy peanut butter and crunchy bits of peanut butter cups, perfect for any occasion.


Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs (at room temperature)
  • 3/4 cup granulated sugar
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 3/4 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup chopped peanut butter cups
  • 1/2 cup heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper, allowing an overhang for easy removal later.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs and granulated sugar on high speed for 4–5 minutes until thick and pale.
  4. Add the vegetable oil, milk, and vanilla extract to the egg mixture, mixing gently until just combined.
  5. Fold the dry ingredients into the wet ingredients using a rubber spatula. Spread the mixture evenly into the prepared pan.
  6. Bake for 10–12 minutes, or until the cake springs back when lightly touched.
  7. Once baked, immediately invert the cake onto a kitchen towel dusted with powdered sugar. Peel away the parchment paper and roll the cake up tightly with the towel. Allow it to cool completely while rolled.
  8. Prepare the filling by beating the peanut butter and powdered sugar together until smooth. Add heavy cream and vanilla, then fold in the chopped peanut butter cups.
  9. Gently unroll the cooled cake and spread the peanut butter filling evenly over the surface. Re-roll the cake carefully without the towel and place it seam-side down on a serving platter.
  10. For the ganache, heat the heavy cream until steaming, then pour it over the chocolate chips. Stir until smooth.
  11. Chill for 30 minutes to set the ganache, then slice into generous pieces.

Notes

Pair with whipped cream or vanilla ice cream for an extra touch of indulgence.
