- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs (at room temperature)
- 3/4 cup granulated sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1/4 cup milk
- 3/4 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 cup chopped peanut butter cups
- 1/2 cup heavy cream (for ganache)
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper, allowing an overhang for easy removal later.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, beat the eggs and granulated sugar on high speed for 4–5 minutes until thick and pale.
- Add the vegetable oil, milk, and vanilla extract to the egg mixture, mixing gently until just combined.
- Fold the dry ingredients into the wet ingredients using a rubber spatula. Spread the mixture evenly into the prepared pan.
- Bake for 10–12 minutes, or until the cake springs back when lightly touched.
- Once baked, immediately invert the cake onto a kitchen towel dusted with powdered sugar. Peel away the parchment paper and roll the cake up tightly with the towel. Allow it to cool completely while rolled.
- Prepare the filling by beating the peanut butter and powdered sugar together until smooth. Add heavy cream and vanilla, then fold in the chopped peanut butter cups.
- Gently unroll the cooled cake and spread the peanut butter filling evenly over the surface. Re-roll the cake carefully without the towel and place it seam-side down on a serving platter.
- For the ganache, heat the heavy cream until steaming, then pour it over the chocolate chips. Stir until smooth.
- Chill for 30 minutes to set the ganache, then slice into generous pieces.
