Description

A comforting and vibrant Italian dish featuring layers of spinach, ricotta, and gooey mozzarella.


Ingredients

  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Sauté the spinach in a large skillet over medium heat for about 3 minutes until wilted. Drain excess liquid.
  3. In a mixing bowl, combine ricotta, 1½ cups of mozzarella, Parmesan, eggs, garlic powder, salt, and pepper. Whisk until smooth.
  4. Fold in the sautéed spinach into the cheese mixture.
  5. Pour mixture into the baking dish, top with remaining mozzarella.
  6. Bake for 30-35 minutes until golden and bubbly. Cover with foil if browning too quickly.
  7. Let cool for a few minutes before serving.

Notes

This dish can be prepared a day in advance. Does well when stored in the refrigerator for up to three days or frozen for two months.
