- 4 cups fresh spinach
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Sauté the spinach in a large skillet over medium heat for about 3 minutes until wilted. Drain excess liquid.
- In a mixing bowl, combine ricotta, 1½ cups of mozzarella, Parmesan, eggs, garlic powder, salt, and pepper. Whisk until smooth.
- Fold in the sautéed spinach into the cheese mixture.
- Pour mixture into the baking dish, top with remaining mozzarella.
- Bake for 30-35 minutes until golden and bubbly. Cover with foil if browning too quickly.
- Let cool for a few minutes before serving.
Notes
This dish can be prepared a day in advance. Does well when stored in the refrigerator for up to three days or frozen for two months.
