Ingredients

- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup red onion, finely chopped
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 1 cup ranch dressing or dressing of choice
Instructions
- In a large glass bowl or trifle dish, layer the chopped romaine lettuce at the bottom.
- Add a layer of cherry tomatoes on top of the lettuce.
- Next, add a layer of diced cucumber.
- Follow with a layer of diced bell peppers.
- Add a layer of corn, spreading it evenly.
- Next, add a layer of black beans.
- Sprinkle shredded cheese over the black beans.
- Add a layer of finely chopped red onion.
- Top with diced avocado and chopped cilantro.
- Drizzle ranch dressing over the top before serving.
