Description

A vibrant and colorful layered chopped salad that is perfect for parties and gatherings, sure to impress your guests.


Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1 cup ranch dressing or dressing of choice

Instructions

  1. In a large glass bowl or trifle dish, layer the chopped romaine lettuce at the bottom.
  2. Add a layer of cherry tomatoes on top of the lettuce.
  3. Next, add a layer of diced cucumber.
  4. Follow with a layer of diced bell peppers.
  5. Add a layer of corn, spreading it evenly.
  6. Next, add a layer of black beans.
  7. Sprinkle shredded cheese over the black beans.
  8. Add a layer of finely chopped red onion.
  9. Top with diced avocado and chopped cilantro.
  10. Drizzle ranch dressing over the top before serving.

Notes

  • Feel free to customize the ingredients based on your preferences.
  • This salad can be made a few hours in advance; just add the dressing right before serving.
