Delicious protein bites made with cottage cheese, fresh blueberries, and bright lemon zest, perfect for a healthy snack.
Ingredients

- 1 cup cottage cheese (low-fat)
- 1 cup fresh blueberries
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Mix it up: In a mixing bowl, combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Gently fold the ingredients together.
- Chill out: Cover the bowl and chill the mixture in the refrigerator for 15–20 minutes.
- Shape and bake: Using a tablespoon, scoop out portions of the mixture and roll them into balls. Place these on a parchment-lined baking sheet. Preheat oven to 325°F (160°C) and bake for 8–10 minutes.
- Cool & garnish: Let them cool slightly. Drizzle with honey if desired and garnish with additional blueberries.
Notes
These bites keep well in the fridge for up to a week. Freeze for up to three months.
